                               Spain wins the 2011 World Pastry Cup

 

The 2011 World Pastry Cup/Coupe du Monde de la Patisserie

First place: Spain

Team SpainWhile we are waiting for the results here is a list of what the Teams had to produce


2011 World PAstry CupEach team has ten hours in which to prepare:
- Three chocolate desserts of identical composition using Valrhona grands crus chocolate, including one dessert forsix persons for presentation purposes -to be integrated in an artistic sugar piece- and two desserts for ten persons for tasting purposes. Each portion is to weigh between 75 g and
125 g,
- Three frozen fruit desserts using products from the Ravifruit range, of identical composition, including one dessert for six persons for presentation purposes -to be integrated in an artistic ice sculpture - and two desserts for ten persons for tasting purposes. Each portion is to weigh
between 100 g and 140 g,
- Twelve desserts on a plate of identical composition, including one for presentation purposes –to be integrated in an artistic chocolate creation – and eleven desserts on a plate for tasting purposes (one dessert per two judges),
- An artistic sugar creation with maximum dimensions: 125 cm height, 60 cm width and 40 cm depth,
- An artistic chocolate creation with maximum dimensions: 125 cm height, 60 cm width and 40 cm depth,
- A sculpted ice creation.
Whilst in their kitchens the candidates draw sugar, pour chocolate or sculpt ice, their enthusiastic supporters cheer them on from the stands with chanting, fog horns, Mexican waves… in an atmosphere worthy of major sports events.

The contest day
Early in the morning, the kick-off for the trials is given at 6.30 am. Four hours and ten minutes later, the first team sends it chocolate dessert for tasting by the jury. This is followed by the frozen fruit desserts and dessert on a plate, until 3.10 pm, both for the tasting and for the presentation of the impressive buffets. The trials will last ten hours in total and will finish at 4.20 pm.
